Prawn Tostadas

Recently my husband and I decided to take a step back from land meat consumption and migrate ourselves back into our pescatarian and vegetarian ways. We do meat free Mondays and incorporate more vegetables and seafood into our diet. Needless to say, when Caught Online presented me with the perfect partnership I couldn’t resist. Without further ado, let’s get to this weeks recipe, prawn tostadas.

This recipe has two parts to it. The first part is the guacamole and the second the tostadas.

Guacamole:

  • 1 large or two small avocados. I prefer haas, but whatever is ripe and ready will do
  • 1 lime but seeing as how these are seasonal in South Africa, a lemon is a perfectly good substitution
  • 1 diced tomato
  • 1/2 diced red onion
  • 1 tablespoon of finely chopped coriander
  • 1 teaspoon of crushed garlic
  • 1/2 teaspoon of salt. Authentic recipe calls for kosher but I use himalayan
  • Pinch of pepper, paprika, cumin and dried chili to taste

Sauce:

  • 1/3 cup or 5 tablespoons of sour cream
  • 1/3 cup or 5 tablespoons of mayonnaise
  • Juice from half a lime or lemon
  • Pinch of garlic powder
  • Few dabs of hot sauce (optional)

Ingredients:

  • 1 Large Wild Caught Argentinian Prawns 750g Bag from Caught Online
  • 1 pack of small tortillasnse. Pat down with paper towel. Add to a bowl where you’ll drizzle it with olive oil and spice with paprika, salt, pepper and cumin.
  • Preheat your oven to 180degrees. Unwrap your tortillas, place them on a baking sheet and put in the oven. Flip after 8-10minutes.
  • Cut your avocado in half and scoop out the flesh. Add guacamole ingredients to a bowl and mash while your tortillas are crisping in the oven.
  • In a small bowl, add the ingredients for your tostadas dressing, whisk it up and place to the side for later.
  • Heat up your pan and drop a knob of butter and place your prawns inside.

Assembly:
Remove your tortillas from the oven and allow to cool for a few minutes on a rack. They will harden slightly making it quite the ASMR experience as you bite into the finished product.
Layer the bottom with your fresh guacamole and top off with the fried prawns.
Drip and drizzle the sauce over the prawns and garnish with fresh coriander to serve.

Optional toppings:
Shredded cheddar cheese or crumbed feta cheese.
