Hummus Recipe {1 of 3}

If you’ve ever had my hummus then you will know that there is something different and addictive about it. I always get asked what I put into it and today I am finally letting the cat out of the bag. If you’re interested in an epic hummus recipe then just keep reading.

Let’s jump into it, firstly you’ll need the following:
1. Cashews {1 handful} (You can switch it up by adding Almonds or other nuts. Alternatively, go nut free)
2. Salt {1 tsp}
3. Pepper {1 tsp}
4. Nutmeg Spice {1/4 tsp}
5. Cumin Spice {1/4 tsp}
6. Coriander Spice {1/4 tsp}
7. Smoked Paprika {1/2 tsp}
8. Olive Oil {30ml}
9. Chickpea {1 can}
10. Garlic {2 tsp}
11. Lemon {2 tbs}
12. Lastly, my secret ingredient… Turmeric {1/4 tsp}

I add my liquids and spices first, so put the salt, pepper, nutmeg, cumin, coriander, paprika, turmeric, olive oil and lemon all in the blender/food processor and blend! Next are the cashews, garlic and one more blitz. Next up are the chickpeas, you can add it all together or gradually, whichever is easier for you.

I have a blender, which means that I often have to stop it, put the back of a wooden spoon into my mixture and give it a good little mix. Make sure your blender is off when doing this. You could add more olive oil when things get thick, chunky and unblendable, however, I prefer to add two tablespoons of water to help the process along.

Blend to the desired texture. Sometimes I like it chunky, sometimes I like it smooth, it all depends on my mood. I scoop it into an airtight console jar {available at Checkers} and drizzle some more olive oil and spice on the top.
